Here is a recipe for a great meal. Larry calls it chili, Allena calls it soup. I think it's somewhere in between. Either way, it's a filling meal that fills the house with a delicious smell for hours before eating. Enjoy!
Hearty Hodgepodge
Makes 8 servings (about 1-1/2 cups per serving)
Ingredients:
1-1/2 lbs lean ground beef
2 10-3/4 oz cans condensed minestrone soup
1 21-oz can pork and beans in tomato sauce
1 12-oz can tomato juice
1 cup sliced celery
1 cup chopped onion
1 cup water
2 tsp Worcestershire sauce
1 tsp dried oregano, crushed
1/4 tsp black pepper
1 clove garlic, minced
Directions:
1. In a large skilled, cook ground beef until meat is brown. Drain off fat.
2. Transfer meat to a 3-1/2 to 4 qt slow cooker. Stir in all remaining ingredients.
3. Cover and cook on low-heat setting for 7-8 hours or on high heat setting for 4-5 hours.
Variations:
- I have used as little as 1-lb of ground beef. I've also used ground turkey.
- I use a large can of Bush's baked beans (any flavor) for the pork and beans.
- I generally add more celery and onion that the one cup it calls for.
